From Columbus, Ohio comes a craft distillery simply named Watershed.
Watershed began distillery operations in 2012, a few years prior to the rush to distill that we see today.
Watershed separates themselves from other bourbon producers by using their own special formula or mash. It is a combination of corn, wheat, rye, barley and spelt.
Spelt is a hulled wheat, which is a crop that is grown in central Ohio, the home of Watershed.
That said, it seems only natural for Watershed to incorporate this special wheat into their bourbon formula.
Watershed is aged on location in charred barrels purchased from a producer of barrels in Jackson, Ohio, and it is bottled at 94 proof.
I was introduced to Watershed by a good friend of mine, whose nephew is one of the owners of the distillery.
